Ingredients:
- 1 cup basmati rice
- 2 tablespoons cooking oil
- 1 teaspoon mustard seeds

- 2-3 green chilies, slit (adjust to your spice preference)
- 2 tomatoes, finely chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish

Rinse and Soak the Rice:
- Begin by rinsing the basmati rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky.
- Then, soak the rice in water for about 20-30 minutes. Drain and set it aside.

Sauté the Aromatics:
- Heat the cooking oil in a large, heavy-bottomed pan or a pressure cooker over medium heat.
- Add the mustard seeds and cumin seeds. Allow them to splutter and release their aroma.
- Add the chopped onions and sauté until they become translucent.

Add Flavorful Spices:
- Stir in the minced garlic, grated ginger, and green chilies. Sauté for a couple of minutes until the raw aroma disappears.
- Add the turmeric powder, red chili powder, and garam masala. Mix well and let the spices toast for a minute.

- Add the finely chopped tomatoes and cook until they turn soft and the oil begins to separate from the mixture. This might take around 5-7 minutes.

- Pour in 2 cups of water and season with salt. Mix well.
- If you're using a pressure cooker, close the lid without the weight and cook on low heat for one whistle. Then turn off the heat and let the pressure release naturally.
- If using a regular pan, cover it with a tight-fitting lid and cook on low heat for about 15-20 minutes or until the rice is cooked and the water is absorbed.

- Once the rice is cooked, fluff it gently with a fork to separate the grains.
