Ingredients:

  • 1 cup basmati rice
  • 2 tablespoons cooking oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2-3 green chilies, slit (adjust to your spice preference)
  • 2 tomatoes, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Rinse and Soak the Rice:

    • Begin by rinsing the basmati rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky.
    • Then, soak the rice in water for about 20-30 minutes. Drain and set it aside.
  2. Sauté the Aromatics:

    • Heat the cooking oil in a large, heavy-bottomed pan or a pressure cooker over medium heat.
    • Add the mustard seeds and cumin seeds. Allow them to splutter and release their aroma.
    • Add the chopped onions and sauté until they become translucent.
  3. Add Flavorful Spices:

    • Stir in the minced garlic, grated ginger, and green chilies. Sauté for a couple of minutes until the raw aroma disappears.
    • Add the turmeric powder, red chili powder, and garam masala. Mix well and let the spices toast for a minute.
  4. Tomato Magic:

    • Add the finely chopped tomatoes and cook until they turn soft and the oil begins to separate from the mixture. This might take around 5-7 minutes.
  5. Cook the Rice:

    • Now, add the soaked and drained basmati rice to the tomato mixture. Stir gently to coat the rice with the flavorful tomato-onion-spice mixture.
    • Pour in 2 cups of water and season with salt. Mix well.
    • If you're using a pressure cooker, close the lid without the weight and cook on low heat for one whistle. Then turn off the heat and let the pressure release naturally.
    • If using a regular pan, cover it with a tight-fitting lid and cook on low heat for about 15-20 minutes or until the rice is cooked and the water is absorbed.
  6. Fluff and Garnish:

    • Once the rice is cooked, fluff it gently with a fork to separate the grains.
    • Garnish the tomato rice with fresh coriander leaves for a burst of color and freshness.
  7. Serve Hot:

    • Tomato rice can be served as a standalone dish or as a delightful accompaniment to yogurt, raita, or any curry of your choice.
