Ingredients:
- 4 large, ripe tomatoes
- 1 cup Arborio rice
- 2 cups chicken or vegetable broth
- 1/2 cup dry white wine
- 1 small onion, finely chopped

- 1/2 cup grated Parmesan cheese

- Cut the tops off the tomatoes and scoop out the seeds and pulp. Be careful not to puncture the tomato shells. Sprinkle the insides of the tomatoes with a little salt and pepper. Turn them upside down on a plate to drain excess liquid.

- In a saucepan, heat the chicken or vegetable broth over low heat. Keep it warm but not boiling.

- Begin adding the warm broth to the rice, one ladle at a time, stirring frequently and allowing each ladle of broth to be absorbed before adding more. Continue this process until the rice is creamy and cooked to your desired level of doneness, usually about 18-20 minutes.

- Stir in the grated Parmesan cheese and season the risotto with salt and black pepper to taste. Mix well.

- Carefully stuff the cooked risotto into the hollowed-out tomatoes.

- Preheat your oven to 350°F (175°C).
- Place the stuffed tomatoes in a baking dish and bake for about 15-20 minutes, or until the tomatoes are tender and the tops are slightly browned.
