Ingredients:
- 1 cup split yellow moong dal (yellow mung beans), soaked for 4-5 hours
- 2-3 green chilies, chopped (adjust to taste)
- 1 small onion, finely chopped
- 1/2 inch piece of ginger, grated
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon turmeric powder
- A pinch of asafoetida (hing)
- Salt to taste
- A handful of fresh coriander leaves, chopped
- Oil for frying

Prepare the Moong Dal:
- After soaking the moong dal for 4-5 hours, drain it well to remove excess water. You can also use a little water to blend it into a coarse paste in a food processor or blender. The paste should not be too fine. It should have a bit of texture.

- In a mixing bowl, combine the coarsely ground moong dal paste, chopped green chilies, finely chopped onion, grated ginger, cumin seeds, red chili powder, turmeric powder, asafoetida, salt, and chopped fresh coriander leaves. Mix everything together to form a thick batter.

Heat the Oil:
- Heat oil in a deep frying pan or skillet over medium-high heat. To check if the oil is hot enough for frying, drop a small amount of batter into the oil. If it sizzles and rises to the surface, the oil is ready.

Fry the Pakoras:
- Using a spoon or your fingers, carefully drop small portions of the moong dal batter into the hot oil. Fry them in batches, making sure not to overcrowd the pan.

Fry Until Golden Brown:
- Fry the pakoras until they are golden brown and crispy, turning them occasionally to ensure even cooking. This should take about 4-5 minutes.

Drain Excess Oil:
- Use a slotted spoon to remove the pakoras from the hot oil and place them on a plate lined with paper towels to drain any excess oil.
