Ingredients:
For the Muthiya:
- 1 cup mixed vegetables (carrots, beans, peas, etc.), finely chopped or grated
- 1 cup whole wheat flour (atta)
- 1/2 cup gram flour (besan)
- 2-3 tablespoons semolina (sooji)
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to your spice preference)
- 1/2 teaspoon garam masala
- 1/2 teaspoon asafoetida (hing)
- 1/2 teaspoon baking soda
- 2-3 green chilies, finely chopped (adjust to your spice preference)
- 1/2 teaspoon sugar
- Salt to taste
- A handful of fresh coriander leaves, chopped
- 1-2 tablespoons yogurt (curd)
- Juice of 1 lemon
- Water, as needed
For Tempering:
- 2 tablespoons vegetable oil
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- Curry leaves, a few

For the Muthiya:

Prepare the Vegetables:
- Grate or finely chop the mixed vegetables, such as carrots, beans, and peas. You can use a food processor for this.

Mix the Ingredients:
- In a mixing bowl, combine the whole wheat flour, gram flour, semolina, vegetable oil, cumin seeds, turmeric powder, red chili powder, garam masala, asafoetida, baking soda, chopped green chilies, sugar, and salt.

Add Vegetables and Herbs:
- Add the grated or chopped mixed vegetables and fresh coriander leaves to the bowl. Mix everything together.

Add Yogurt and Lemon Juice:
- Gradually add yogurt and lemon juice to the mixture. Mix well to form a firm dough. If the dough is too dry, you can add a little water to reach the right consistency.

Shape the Muthiya:
- Divide the dough into small portions and shape them into cylindrical or oval dumplings. This step gives the muthiya their characteristic shape.

Steam the Muthiya:
- Place the shaped muthiya in a steamer and steam them for about 20-25 minutes or until they are cooked through. You can insert a toothpick into a muthiya, and it should come out clean.

Temper the Muthiya:
- In a separate pan, heat 2 tablespoons of vegetable oil. Add mustard seeds and cumin seeds. Let them splutter.
- Add asafoetida and curry leaves. Sauté for a few seconds.

Add Steamed Muthiya:
- Add the steamed muthiya to the tempering. Stir gently and let them cook for a few minutes until they become slightly crispy on the outside.

- Serve the Mix Veg Muthiya hot as a snack or appetizer. They are often enjoyed with green chutney or tamarind chutney.
