Ingredients:
- 1 cup cashew nuts
- 1/2 cup sugar
- 1/4 cup water
- 1/4 teaspoon cardamom powder
- A few saffron strands (optional)
Instructions:

Start by grinding the cashew nuts to a fine powder. You can do this in a food processor or by placing the cashews in a ziplock bag and crushing them with a rolling pin. Make sure the powder is very fine for a smooth texture.

In a non-stick pan, combine the sugar and water. Heat it over low heat until the sugar dissolves completely.

Once the sugar syrup starts to boil, reduce the heat to low and add the cashew nut powder. Stir continuously to avoid lumps.

Keep stirring the mixture on low heat. It will start to thicken and leave the sides of the pan. This should take about 5-7 minutes.

At this stage, add the cardamom powder and saffron strands (if using). Mix well.

Turn off the heat and transfer the mixture to a greased plate or a parchment paper-lined tray.

While the mixture is still warm, press it down with a flat spatula to flatten it evenly. You can also use a greased rolling pin to roll it out.

Let it cool for about 30 minutes. Once it cools down and hardens, use a knife to cut it into diamond or square-shaped pieces.
Your Kaju Katli is ready to be enjoyed! Store it in an airtight container, and it will stay fresh for several days.
