Ingredients:

For the Teriyaki Sauce:

  • 1/2 cup soy sauce
  • 1/4 cup sake (Japanese rice wine) or white wine
  • 1/4 cup mirin (sweet rice wine)
  • 3 tablespoons granulated sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon cornstarch (to thicken the sauce)
  • 2 tablespoons water (for cornstarch mixture)

For the Chicken:

  • 4 boneless, skinless chicken thighs or chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil

Instructions:

1. Prepare the Teriyaki Sauce:

  • In a saucepan, combine the soy sauce, sake (or white wine), mirin, sugar, minced garlic, and grated ginger.

  • Place the saucepan over medium heat and stir until the sugar dissolves. Let it simmer for a few minutes, allowing the sauce to thicken slightly.

  • In a separate small bowl, mix the cornstarch and water to create a slurry. Add this slurry to the sauce and continue to stir. Simmer for a few more minutes until the sauce thickens to your desired consistency.

  • Once the sauce has thickened, remove it from the heat and set it aside.

2. Prepare the Chicken:

  • Season the chicken thighs or breasts with a pinch of salt and black pepper on both sides.

  • In a large skillet or frying pan, heat the vegetable oil over medium-high heat.

  • Pour the prepared teriyaki sauce over the cooked chicken in the skillet. Reduce the heat to low.

  • Spoon the sauce over the chicken continuously, allowing it to glaze the chicken. This should take about 2-3 minutes.

4. Serve:

  • Remove the chicken from the skillet and let it rest for a minute.

  • Slice the chicken into thin strips or serve it whole.
