- 1/4 teaspoon black salt (kala namak)
- 1/4 teaspoon chaat masala
- A pinch of asafoetida (hing)
For the Chutneys:
- Tamarind chutney (sweet and tangy)
- Green chutney (spicy and minty)

Prepare the Chickpeas: If you're using dried chickpeas, soak them overnight and then boil until they are soft. If using canned chickpeas, rinse and drain them. Set aside.

Chop the Vegetables: In a large mixing bowl, combine the finely chopped red onion, cucumber, tomato, green chili, and fresh coriander leaves. If you're using pomegranate seeds and boiled potatoes, add them at this stage.

Add Chickpeas: Add the boiled chickpeas to the bowl with the chopped vegetables.

Prepare the Chaat Masala: In a small bowl, mix the roasted cumin powder, red chili powder, black salt, chaat masala, and a pinch of asafoetida.

Toss and Mix: Gently toss and mix all the ingredients together, ensuring the chaat masala is evenly distributed.

Add Chutneys: Drizzle sweet tamarind chutney and spicy green chutney over the Channa Chaat. Adjust the amount of chutneys to your taste preferences.
