Ingredients:
- 1 cup rice flour
- 1 cup water

Prepare the Dough:
- In a saucepan, bring 1 cup of water to a boil. Add a pinch of salt and 1 tablespoon of vegetable oil (if using).
- Once the water is boiling, reduce the heat to low, and gradually add the rice flour while stirring continuously. Stir until the mixture forms a smooth dough.
- Remove the saucepan from the heat.

Knead the Dough:
- Allow the dough to cool for a few minutes. Once it's cool enough to handle, knead the dough until it becomes smooth and pliable. If the dough is too dry, you can sprinkle a little warm water and knead it to the right consistency.

Shape the Pathiris:
- Divide the dough into small lemon-sized balls.
- Take one ball of dough and flatten it into a small disc, about 4-5 inches in diameter. You can use your hands or a rolling pin to shape it.

Cook the Pathiris:
- Heat a griddle (tava) over medium-high heat. Once it's hot, place the shaped pathiri on the griddle.
- Cook the pathiri on one side until small bubbles start to appear, then flip it over.

Add Ghee or Oil:
- If you prefer, you can brush the cooked side with a little ghee or vegetable oil. This step is optional but adds flavor and prevents the pathiri from drying out.

Cook the Other Side:
- Flip the pathiri again and cook until both sides are slightly golden brown.

Serve:
- Remove the pathiri from the griddle and serve it hot.
