Ari Pathiri, also known as Rice Pathiri, is a popular South Indian and Malabar dish made from rice flour. It is a type of flatbread that's soft and delicious. Here's a recipe for making Ari Pathiri:

  • 1 cup rice flour
  • 1 cup water
  • A pinch of salt
  • 1 tablespoon vegetable oil (optional)
  • Ghee or vegetable oil for greasing (optional)

Instructions:

  1. Prepare the Dough:

    • In a saucepan, bring 1 cup of water to a boil. Add a pinch of salt and 1 tablespoon of vegetable oil (if using).
    • Once the water is boiling, reduce the heat to low, and gradually add the rice flour while stirring continuously. Stir until the mixture forms a smooth dough.
    • Remove the saucepan from the heat.
  2. Knead the Dough:

    • Allow the dough to cool for a few minutes. Once it's cool enough to handle, knead the dough until it becomes smooth and pliable. If the dough is too dry, you can sprinkle a little warm water and knead it to the right consistency.
  3. Shape the Pathiris:

    • Divide the dough into small lemon-sized balls.
    • Take one ball of dough and flatten it into a small disc, about 4-5 inches in diameter. You can use your hands or a rolling pin to shape it.
  4. Cook the Pathiris:

    • Heat a griddle (tava) over medium-high heat. Once it's hot, place the shaped pathiri on the griddle.
    • Cook the pathiri on one side until small bubbles start to appear, then flip it over.
  5. Add Ghee or Oil:

    • If you prefer, you can brush the cooked side with a little ghee or vegetable oil. This step is optional but adds flavor and prevents the pathiri from drying out.
  6. Cook the Other Side:

    • Flip the pathiri again and cook until both sides are slightly golden brown.
  7. Serve:

    • Remove the pathiri from the griddle and serve it hot.

Ari Pathiri is often served with curries, pickles, or chutneys. It's a simple and delightful dish that's enjoyed in Kerala and other parts of South India.
