Ingredients:

  • 2 cups Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup dry white wine (optional)
  • 1 small onion, finely chopped
  • 2 tablespoons butter
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 1 cup mozzarella cheese, cut into small cubes
  • 1/2 cup marinara sauce or tomato sauce
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil, for frying
  • Fresh basil or parsley, chopped, for garnish (optional)

Instructions:

  1. Prepare the Rice:

    • In a saucepan, heat the chicken or vegetable broth over low heat. Keep it warm but not boiling.
    • In a large skillet, heat the butter over medium heat. Add the finely chopped onion and sauté until it becomes translucent.
