Ingredients:
For the Crispy Noodles:
- 1 cup of noodles (boiled and strained)
- Vegetable oil for deep frying
- Salt to taste
For the Sauce:
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 1 green bell pepper (capsicum), thinly sliced
- 1/2 cup cabbage, thinly sliced
- 1/2 cup carrot, julienned
- 1/2 cup French beans, thinly sliced
- 1/4 cup peas (fresh or frozen)
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons tomato ketchup
- 1 tablespoon soy sauce
- 1 tablespoon chili sauce (adjust to your spice preference)
- 1 tablespoon vinegar
- 1 teaspoon sugar
- Salt to taste
- 1 cup water
- 2 tablespoons cornstarch mixed with 2 tablespoons water (cornstarch slurry)
Instructions:
For the Crispy Noodles:
-
Heat vegetable oil in a deep pan for deep frying. To check if the oil is hot enough, drop a small piece of noodle into the oil. If it sizzles and rises to the top, the oil is ready.
-
Carefully add the boiled noodles to the hot oil. Fry them until they turn golden and crispy. This usually takes just a few minutes. Make sure not to overcrowd the pan; fry in batches if needed.
-
Once the noodles are crispy, remove them from the oil using a slotted spoon and place them on paper towels to drain excess oil. Set aside.
For the Sauce:
-
Heat 2 tablespoons of vegetable oil in a large pan or wok over medium-high heat.
-
Add the minced garlic and grated ginger. Sauté for a minute or until they become aromatic.
-
Add the chopped onions and cook until they become translucent.
-
Add the sliced vegetables (bell pepper, cabbage, carrot, French beans, and peas). Stir-fry the vegetables for a few minutes until they start to become tender but are still crisp.
-
In a separate bowl, mix together the tomato ketchup, soy sauce, chili sauce, vinegar, sugar, and salt.
-
Pour this sauce mixture over the stir-fried vegetables. Stir well to coat the vegetables with the sauce.
-
Pour in 1 cup of water and bring the mixture to a simmer.
-
Slowly add the cornstarch slurry while stirring continuously. This will help thicken the sauce. Adjust the consistency to your liking; you can add more water if it's too thick.
To Serve:
-
On a serving plate, arrange a bed of crispy noodles.
-
Pour the sauce with vegetables over the noodles.
-
