Ingredients:

For the Crispy Noodles:

  • 1 cup of noodles (boiled and strained)
  • Vegetable oil for deep frying
  • Salt to taste

For the Sauce:

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 1 green bell pepper (capsicum), thinly sliced
  • 1/2 cup cabbage, thinly sliced
  • 1/2 cup carrot, julienned
  • 1/2 cup French beans, thinly sliced
  • 1/4 cup peas (fresh or frozen)
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons tomato ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon chili sauce (adjust to your spice preference)
  • 1 tablespoon vinegar
  • 1 teaspoon sugar
  • Salt to taste
  • 1 cup water
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (cornstarch slurry)

Instructions:

For the Crispy Noodles:

  1. Heat vegetable oil in a deep pan for deep frying. To check if the oil is hot enough, drop a small piece of noodle into the oil. If it sizzles and rises to the top, the oil is ready.

  2. Carefully add the boiled noodles to the hot oil. Fry them until they turn golden and crispy. This usually takes just a few minutes. Make sure not to overcrowd the pan; fry in batches if needed.

  3. Once the noodles are crispy, remove them from the oil using a slotted spoon and place them on paper towels to drain excess oil. Set aside.

For the Sauce:

  1. Heat 2 tablespoons of vegetable oil in a large pan or wok over medium-high heat.

  2. Add the minced garlic and grated ginger. Sauté for a minute or until they become aromatic.

  3. Add the chopped onions and cook until they become translucent.

  4. Add the sliced vegetables (bell pepper, cabbage, carrot, French beans, and peas). Stir-fry the vegetables for a few minutes until they start to become tender but are still crisp.

  5. In a separate bowl, mix together the tomato ketchup, soy sauce, chili sauce, vinegar, sugar, and salt.

  6. Pour this sauce mixture over the stir-fried vegetables. Stir well to coat the vegetables with the sauce.

  7. Pour in 1 cup of water and bring the mixture to a simmer.

  8. Slowly add the cornstarch slurry while stirring continuously. This will help thicken the sauce. Adjust the consistency to your liking; you can add more water if it's too thick.

To Serve:

  1. On a serving plate, arrange a bed of crispy noodles.

  2. Pour the sauce with vegetables over the noodles.
