Ingredients:
- 2 cups thick poha (flattened rice)
- 1 large potato, thinly sliced
- 1/4 cup raw peanuts
- 2-3 green chilies, chopped (adjust to your spice preference)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon red chili powder (adjust to your spice preference)
- A pinch of asafoetida (hing)
- 10-12 curry leaves
- 2 tablespoons vegetable oil
- Salt to taste
- Sugar (optional, to taste)
- Fresh coriander leaves, chopped (for garnish)
- Fresh lemon juice, for drizzling (optional)
Instructions:

Wash and Dry Poha:
- Place the poha in a sieve or colander and wash it gently under running water. Let it sit for about 15-20 minutes to allow excess moisture to drain. It should become soft but not mushy.

Prepare Potatoes:
- Heat 2 tablespoons of vegetable oil in a deep pan or kadai over medium heat. Add the thinly sliced potatoes and fry them until they turn crisp and golden brown. Remove the potatoes from the oil and drain them on a paper towel.

Roast Peanuts:
- In the same oil, add the raw peanuts and roast them until they become crispy. Remove and drain on a paper towel.

Season the Oil:
- In the remaining oil, add cumin seeds and mustard seeds. Let them splutter.

Spice It Up:
- Add chopped green chilies, curry leaves, asafoetida, and turmeric powder. Sauté for a minute.

Add Poha:
- Add the drained and softened poha to the pan. Gently mix everything together. If the poha is too dry, you can sprinkle a little water over it. Season with salt and red chili powder.

Mix Well:
- Mix everything well and sauté for a few more minutes until the poha is heated through and evenly coated with the spices.

Add Potatoes and Peanuts:
- Add the crispy fried potatoes and roasted peanuts to the poha. Mix well.

Sweet and Sour:
- If you like a hint of sweetness, you can add a little sugar to the chivda at this point. Mix to incorporate the sugar.

- Garnish with freshly chopped coriander leaves and a drizzle of fresh lemon juice if desired.
